Giant Red Velvet Valentine Whoopie Pie with Orange Cream Cheese Filling Recipe

Oh Whoopie Pie.  Why do you taunt me? It’s time for Valentine Whoopie Making!  Whoopie Pie making, that is.

It’s My birthday week!  Yes, I am that kind of person who celebrates the whole week by obnoxiously decaring to everyone that it is indeed my birthday.  Not only it is my birthday, but my birthday also shares a date with another holiday you might have heard about…Valentine’s Day.

Honestly, I love to spend my day not just celebrating my birthday, but celebrating the loved ones around me. This year, the kiddos and I decided to make a HUGE Family Size Red Velvet Valentine Whoopie Pie and fill it with my ABSOLUTE Favorite Orange Cream cheese filling. This thing is HUGE enough to share with the entire family and believe me, you want to share this behemoth.

In case you aren’t familiar with our Lancaster County, Pennsylvania dessert, the Whoopie Pie is not an actual pie.  And it’s not really a cake either. I describe it as a cookie made from cake filled with heaven on earth and a few hundred calories.

One theory claims that the Pennsylvania Amish not wanting to waste anything started making the delicious dessert by using leftover cake batter and icing.  The story goes on to claim that when Amish school children would find these treasures in their lunch boxes they would yell “WHOOPIE!!” in excitement. To tell you the truth, that’s pretty much the reaction that I got when I told my kiddos what were going to make for Valentine’s Day.

Now, we “cheated”, if you will, by using a vanilla cake mix to get us started. If you have kiddos, you know that sometimes you need to just speed the process along before they lose interest and move onto other things.
Also, when it came to making the two outer cake layers, we didn’t want to use a round cake pan because we knew it would simply end up looking like a layered cake. Instead we wanted them to look like an whoopie pie. Using parchment paper, draw out a circle approximately 8” in diameter and place it on a cookie sheet. Sloooowly, dump the cake batter into the middle of the circle allowing it to spread out.

Honestly, we weren’t sure how this was going to turn out or if we would end up with a huge mess in our oven.  But to our surprise, it was a complete success!Red Velvet Whoopie Pie with Orange Cream Cheese Recipe

Giant Family Size Red Velvet Whoopie Pie with Orange Cream Cheese Filling

What you will need
1 box white cake mix
1 box of instant vanilla pudding mix
4 large eggs
1 Tablespoon of cocoa powder
1 tablespoon of white vinegar
1 cup of milk
½ cup of vegetable oil
A splash of vanilla
Red food coloring- enough to make it as red as you wish

How to make it

Heat the oven to 350 degrees
Combine all of the above ingredients and beat for 4 minutes until completely mixed
Slowly pour the mixture onto parchment paper until it reaches the desired size
Bake for about 25 minutes or until a toothpick comes out clean when stuck into the middle.  The cooking time with depend on how large you make your cake.  Just simply keep and eye on it as it is cooking.
Allow the two cakes to completely cool on a cooling rack.

 

For the Orange Cream Cheese Frosting Filling

8oz. Cream Cheese (room temperature)
1 stick of butter (room temperature)
3 cups of confectioners sugar
2-3 TBS of orange juice
Grated orange rind

How to make it

Combine all of the above ingredients in a large mixer and spread as thick as possible on one of the flat sides of the outer whoopie pie.
